Sausage Polenta Pie

Ingredients
- Filling
- 8 oz. Hot or Mild New York Style Italian Sausage (remove from casing)
- 2 Green Onions (chopped small)
- 4 Cloves Garlic (minced or crushed)
- 1/4 teaspoon Salt
- 1 1/2 oz. Sonoma Dried Tomato Halves (blanched and thinly sliced)
- 1 10 oz. pkg Frozen Chopped Spinach (thawed, squeezed dry)
- 1 cup Shredded Mozzarella Cheese Italian Parsley (chopped for garnish)
- Polenta Crust
- 3 cups Water
- 1 teaspoon Salt
- 1 cup Yellow Cornmeal
- 1 cup Shredded Sharp Cheddar Cheese
Procedure

Preheat oven to 400o.

Prepare filling by spraying a large skillet with nonstick spray and heat to medium.

Remove sausages from casing and saute with onions, garlic, salt and dried tomatoes for 10-12 minutes or until sausage is browned.

Assemble pie by spreading spinach evenly over polenta.

Top with filling, sprinkle with mozzarella.

Bake for 15-20 minutes or until heated thoroughly.

Garnish with parsley.

Serve hot.
